This Sweet Pizza recipe is on a chocolate chip base but it could just as easily be made on plain vanilla – toppings are suggestions only and we simply went crazy in the confectionary corner and picked our favourites. You could be a little healthier – we’ve used a mixture of various dried fruits including cherries, strawberries, pineapple, apple pieces, raisins and Yoyo Fruit Straps with success too!
Cookie Pizza Base
100g caster sugar
100g soft brown sugar
100g Stork Baking Block, or other ‘safe’ hard maragarine
1 tsp Vanilla Extract
1 egg, beaten
210g plain flour
½ tsp bicarbonate of soda
pinch of salt
75g of ‘safe’ chocolate chips or chopped chocolate (optional)
Toppings
You can pick what you like here but we used;
2x55g bags Skittles
1 Handful of mixed chopped nuts
75g Chopped ‘safe’ chocolate
75g (1 pack) Strawberry Fizzy Strip Sweets – although on further testing the Cola were better!
2tbsp Desiccated Coconut
2Tbsp of Strawberry Jam or Slightly cooled Melted chocolate
Preheat the Oven to 180°C. Line a 25cm Pizza Pan with Baking paper or foil – if you leave it a little larger than the pan you can easily lift the cookie when baked. If using a pizza stone no lining is usually required.
Cream the sugars and margarine together, when fluffy and light add the beaten egg and vanilla. Add the flour, bicarbonate of soda and pinch of salt and the chocolate chips, if using. Mix well to form a doughy consistency. Place into the pan and shape to fit. Bake for 12-15 minutes.
Leave to cool for 5 minutes before removing from the pan and any foil or paper, to a wire rack for a further 5 minutes. Whilst the cookie is cooling assemble your toppings in a series of little dishes and get the kids ready to top the base.
Once the cookie is cool place it onto your preferred serving dish (we use a pizza board to allow us to use our pizza cutter to slice it without worrying about the plate). Now smear the top in the jam or melted chocolate then let the kids loose! Sprinkle on your assorted toppings however you want, slice and enjoy!
